I met with Caroline at her favorite coffee shop Ten Belles in the 10th in Paris for this cool interview. She has a great soul, dynamic and positive, I connected with this foodie in a heartbeat.
How do you feel about Paris and Parisians in general? I’m in love with Paris. I live there since 31 years and never get bored! Everyday, I have the impression to discover a bit more my city, while walking with admiration like a child. If you are a minimum curious, I believe you can only be happy here … Between the architecture, the parks, the museums, the concerts and obviously the restaurants … I think we are so lucky! Everything is changing (in a good sense) … The bad neighborhoods, are becoming the “place to be”. Codes are evolving lately and it’s awesome. I don’t know if I would be able to live elsewhere. Concerning the Parisians …I have the impression that Paris is becoming everyday a younger and more dynamic city where everyone has new ideas, new projects and I love that! Therefore, nothing annoys me more than this famous cliché with the Parisian wearing a beret with a baguette and accordion. We are becoming the new New York no?
What is the « PARISIAN FLAIR » ? French charm… All is said!
How do you LOVE? Your definition of French Love ? Passionately, a little too much actually. I fall in love very rarely but when I open my heart to a man, he is the only thing I see, everywhere. My definition of French love is full on romanticism! But personally, I’m more a pizza-dvd-laughters than midnight walks on the Pont des Arts.
Your dream? Being happy.
The best gift you ever received? The infinite love of my grandmother which, she showed be everyday of her life.
Your Madeleine de Proust ? Listening to “Reality” by Richard Sanderson, the music of “la Boum” (famous French movie) which, rocked all my childhood.

Your favorite French wine? A bottle of Evian!
Your French meal? Steak frites! There is more gourmet but it’s so good …
A desert ? Watermelon! My childhood nickname is actually “miss watermelon” ( I see you coming … no it wasn’t only because of my passion for the fruit)
A secret recipe ? Not to feel guilty when you eat, otherwise you gain weight! My secrete recipe, my motto! I assure you it works because with the amount of food I eat, I should be stealing clothes from Hurley of Lost.
You two favorite restaurants in Paris ? Dersou, rue Saint-Nicolas. Not very original because it was elected best table by le Fooding this years, but I had spotted it a long time ago! Aux 2 amis, rue Oberkampf. Maybe not the “best” but you eat well and there is a cool atmosphere! I love spending my evenings there.

Favorite French movie ? La Boum, surprising no? It’s a movie I saw without lying 800 times! For two years, I saw it almost everyday, on Monday: la boom, on Tuesday: la Boom, on Wednesday: la boom, o etc… I’m obsessional sometimes, yes…

Favorite place in France and your memories ? Saint Rémy de provence… I’m in love!

Perfume ? Musk by Kiehl’s
The quintessential French look ? A white t-shirt, a pair of jeans and sneakers. Nothing better!

Favorite French word? Why ? Chance ! But it’s more the meaning than the word no?
6- Let’s talk about French music
Favorite French musician/ group? A music fan like me can’t choose one single artist … I love above all Jean-Jacques Goldman, Michel Berger, France Gall, Michel Legrand but also Yodelice, Benjamin Biolay, Vanessa Paradis and so much more … A french music party and I’m in paradise, I also love singing!

Lyrics of a song which resonate with you? The lyrics of l‘hymne à l’amour by Edith Piaf. No more beautiful love declaration. .“ Le ciel bleu sur nous peut s’effondrer, et la terre peut bien s’écrouler, peut m’importe si tu m’aimes, je me fous du monde entier”.
How does your attachement to France and PARIS and your French bringing up have contributed to the realization of your project? I was lucky to have a very happy childhood very cool surrounded by my parents and 2 brothers. My mother is very admirative of what I’m doing and impressed by all I can eat without weighing 500 pounds! Therefore, it’s a booster allowing me to pursue. And Paris allows it, a city in perpetual evolution, which is perfect for someone curious and foodie like me. And I have another “real” job so less pressure. It helps …
Why should we follow your Instagram ? Because it’s cool and appealing! Now, you will always have restaurant ideas for you and your friends and affordable too! You can trust me, I only post cool spots. And it’s funny to see Robuchon sticking his tongue out no?
What are your future projects? Working for a magazine or having a small column in a culinary show… Soon, soon!

(Français) Certains critiqueront, diront peut être que c’était prévisible et que la chute était attendue, évidente. The Parisian Flair s’est rendu au Théâtre de Paris et a passé un très bon moment.
Tout d’abord – on pense connaître ces gens sur scène – ils nous sont si familiers, étonnement proche. Tout de suite on replonge dans des scènes mythiques des « Visiteurs » et c’est limite si Richard Berry ne devenait pas Christian Clavier surtout dans les scènes de tensions et de disputes.
